We had the privilege of meeting Le Hibou’s head waiter Niclas. Niclas has worked at Le Hibou since opening and seen it develop. For autumn 2023, Le Hibou is launching a new menu, The View, which is inspired by the sight, architecture and landscape we see from the rooftop bar. At our meeting with Niclas, we heard more about Le Hibou and the new menu, as well as his best France tips.
You have worked at Le Hibou since the beginning, tell us what has happened during these years?
A lot has happened but the focus has always been to provide a lovely relaxed living room feeling with good drinks and service first and foremost.
You have a new cocktail menu, The View, tell us more about it.
We have had different themes over the years and now this autumn we are launching The View which reflects the view from Le Hibou, where each drink is an interpretation of what we see around us such as Dramaten, Norrmalmstorg and Gröna Lund. The menu is launched on Friday, September 22.
Which drink should we not miss at Le Hibou?
A drink that has become a classic with us is the Tokyo Collins, which is insanely good!
You have one of Stockholm’s best views to celebrate New Years eve at, what happens at your place on New Year’s?
That’s right, here you can see fireworks over Stockholm and Nybroviken. We are open 14-01 on New Year’s Eve and if you want to book the exclusive seats on the terrace, they will be released on October 1.

We know the French Riviera is your second home, can you give us your best France tips?
Yes that’s right, I used to work there for years. There are many pearls. One of my favorite restaurants is Franchin in Nice, their lobster pasta is a must. Going up into the mountains in June and looking at the blooming lavender fields is wonderful.
